Vegan Cookie Recipes You Must Try

We travel year round and rarely do we find an Airbnb with an oven but recently we have been in the Georgian Republic since September and I have had an oven. Yay! I had time and the cooking resources to do some baking on this stop. I searched the internet and especially on Pinterest for Vegan Cookie Recipes and after trying bunches of batches, these are 10 of the best recipes I found for Vegan cookies. I personally baked each of these recipes and every one is delicious. I have been asked to pick a favorite and that is hard since they are all so good, but, I am a sucker for Pistachio Nuts, so, for that reason, “My Favorite” is No. “4”.

Vegan Cookie Recipes – #1 thru #5

1. Vegan Recipe for The World’s Easiest Cookie
from The Kitchn

“Let’s get this out of the way upfront: I know calling a cookie recipe the “world’s easiest” sounds a bit ridiculous, but I can explain. The name started out innocently enough — one day, I created an easy-to-make almond cookie recipe. I adored this recipe. In my excitement, I’d say to friends, “You have to try these almond cookies; they’re, like, the world’s easiest cookies.” And well, the name stuck. It stuck because I really think of these as the world’s easiest cookies. To make a batch, all you do is combine almond flour, baking powder, maple syrup, and vanilla extract in a large bowl and stir. That’s it! No butter, no eggs, no chilling the dough (or rolling it out). You just need four ingredients and a little elbow grease. After about 10 minutes of baking, you’re rewarded with macaroon-flavored cookies that are crisp on the edges and chewy in the center.”

2. Vegan Chewy Molasses Spelt Cookies with Candied Ginger
from Oh She Glows

“These molasses cookies are made a bit healthier using light spelt flour instead of all-purpose flour. To my delight, they turned out even better than my former favorite ginger cookies. The spelt flour lends a rich, nutty flavor and compliments the rustic molasses, cinnamon, and ginger flavors nicely. If you are looking for a last-minute cookie idea that is super quick to throw together, try these on for size. Keep in mind this batch only makes 1 dozen cookies, so you might want to double it for a larger crowd.”3 Ingredient Coconut Cookies

3. Vegan Chocolate Cookies
from Loving It Vegan

“What I love about cookies is that they’re so easy and quick to make. These vegan chocolate cookies bake in 10 minutes! I mean really! So if you’re in the mood for a batch of cookies there’s really not a lot standing between you and a tray of warm chocolate cookies straight from the oven complete with melting chocolate.”

4. Vegan Flourless Pistachio Cookies
from Lazy Cat Kitchen

“I love eating well and feeling healthy, but I do have one weakness, which tends to rear its ugly head now and again. I have a massive sweet tooth! It also happens that you guys seem to go crazy for sweet recipes much more than the savory ones and that’s more than enough encouragement as far as I’m concerned. I do try to keep my sweet cravings in check as I know that excess sugar tends to wreak havoc with your body, but ‘balance’ is everything and so one small cookie with your afternoon coffee shouldn’t hurt, should it? These vegan flourless pistachio cookies require only 5 ingredients, are super simple to make and contain no gluten. They are crunchy on the outside and chewy on the inside.”

5. Vegan Skinny Cookie Dough Bites
from House of Yumm

Those healthy little balls of yumminess? Well, sometimes a girl just needs to have chocolate.
“Which is what led to these chocolate chip cookie dough bites. Skinny style. These are made with gluten-free oats, cashews, raw agave nectar, vanilla extract, and some wonderful vegan and gluten-free chocolate chips. Yes, I found gluten-free, vegan chocolate chips at the market. Just a regular market. I didn’t even need to make an adventure to Whole Foods for these bad boys. And the best part? The ones I got were the same price as regular chocolate chips! Yay! Healthy and inexpensive. Win!”

6. Vegan Sugar-free Vegan Chocolate Peanut Butter Oatmeal Cookies
from The Spruce

“Made with bananas, peanut butter, soy milk, and oatmeal, these refined sugar-free cookies are sweetened with a bit of maple syrup, making them perfect for health-conscious families looking to reduce their refined sugar intake. Admittedly, these sugar-free chocolate peanut butter cookies aren’t quite as tasty as Mrs. Fields’, but they’ll satisfy your chocolate cravings, are low in fat, and are healthy enough to eat for breakfast, tucked into a lunchbox for lunch, or as an after-school snack. They taste great, but they aren’t super sweet, so they might be a bit different than what you’re used to if you’re used to eating lots of regular sugar. Vegetarian, vegan, low-fat, refined sugar-free and high-fiber.”

7. Vegan Lemon Cookies
from Genius Kitchen

“I made these cookies according to the recipe but switched out the wheat flour with Bob’s Red Mill baking blend (1 to 1 substitution) to make them glutenfree. They are so delicious I could cry. I haven’t had a “real” tasting cookie since being diagnosed with multiple food allergies. They are perfect and I am so grateful for the recipe!!”

8. Secret Vegan Peanut Butter Cookies
from Chocolate Covered Katie

“These cookies are impossible to stop eating!!! It’s been over six years since I first shared the recipe for these peanut butter cookies on the blog, and yet it is still one of the most popular recipes I’ve ever posted, with readers writing in pretty much on a daily basis to say how much they love these cookies. One reader even emailed me to say she’d entered the recipe into a contest… and these peanut butter cookies took home first prize! The cookies are so deliciously light, soft, chewy, and better than any other peanut butter cookie—vegan or not—that I’ve ever tried.”1 Bowl Vegan Sugar Cookies

9. 1 Bowl Vegan Sugar Cookies
from Minimalist Baker

“I’m not a negative person, but I do often expect the worst in order to safeguard myself from less than ideal outcomes. For example, say we’re planning to hang out with friends. I think, “This may go terribly wrong. I’ll say something stupid. I’ll spill wine on their couch. There will be lots of awkward silence. They’ll never invite us over again.”
That way, if the evening goes at all OK, it was way better than I expected! Success! It’s like some twisted way of guaranteeing a “successful outcome” in any circumstance. Aren’t I smart? (Cheeky grin.) Does anyone else do this? Because it kind of makes me feel like some bizarre form of a control freak and I need some more people in this boat with me. Either that or send 18 dozen of these sugar cookies to help me cope, STAT.”

10. Vegan 3 Ingredient Coconut Cookies
from Bigger Bolder Baking

“My recipe for 3 Ingredient Coconut Cookies is a double hit of coconut, made of just shredded coconut, a little sugar, and coconut milk. Coconut is one of my all-time favorite things to bake with. Rich and creamy, while still being light and nutty, what’s not to love? Since you Bold Bakers love coconut just as much as I do, I know that you will enjoy a recipe that makes this ingredient the star.”
